Breakfast Burrito Recipe

We know you can’t spend every morning of the year eating our famous breakfast burrito while taking in the Red Rock views. Luckily for you, we are willing to share the recipe that allows our guests to start every morning off on the right foot 🙂  This healthy recipe dates back to when the Taraumara Tribe needed to travel long distances.  Enjoy our burrito in our cozy dining area (below), or step out onto the balcony and watch the sunrise.


In a Rice Cooker (Costco has great ones for $25):

·        Add 3 Cups of water

·        Add ¾ cup of Black Beans

·        Add ½ cup of Brown Rice

·        Add ¼ cup of Chia Seeds

·        Add 1 Tablespoon of Chili Powder

Press Brown Rice Button

When done:

·        Mix in 2  14oz cans of Diced Tomatoes

·        Mix in 2  sm cans of Chopped Chilis

·        Mix in 5 to 7 Chopped Garlic Cloves

·        Mix in 2 cups of Chopped Basil Leaves


Add mixture to Burrito Shell

·        You can add Jack Cheese

·        Top with Salsa

Cook with foil cover for 30 minutes at 350

Uncover for 7 minutes

Top Off with Sour Cream and Avocados
